A knock box is a device used to collect used espresso grounds, or "pucks", after making espresso. It's also known as a "bash bin" or "coffee column." After brewing, tap the portafilter against the knock box's padded surface. The knock box's catch bin collects the spent pucks. Place it next to the espresso machine so you can quickly dispose of used grounds.
Knock boxes are beneficial in a number of ways. They're more sanitary alternative to throwing used coffee grounds directly into the trash. You also protect the portafilter, as knocking the portafilter against a trash can damage it. A knock box also traps the smell of old coffee grounds, keeping your kitchen nice and fresh. Store the grounds until ready toss, or use in compost.
